Restaurant-Inspired Crispy Chicken Fingers

Ben and I love breaded chicken tenders/fingers/tenderloins, but I have never found a really great recipe for this before.  I was looking through the recipes on a recent blog link party, and I found this recipe for Chick-fil-A inspired chicken nuggets and thought I'd give it a whirl.
Ben gave it a two-thumbs up on the first try, and I thought they were great except being a good bit too salty.  I have made them twice now, but I didn't get to eat them last time due to my self-imposed diet restrictions.  I reduced the salt by half last time, and I ate one small bite, and thought it was much better.

Whisk 1 egg and 1 cup milk together, and add your chicken breast tenderloins while preparing the breading. Also, heat a cup or two of oil in a dutch oven or skillet over a medium-hot burner.

Mix 2 cups flour, 4 tbsp. powdered sugar, 2 tsp. black pepper, and 1 tbsp. salt.  Dip the chicken in the flour mixture.

 
If you like extra crispy chicken like we do, repeat those steps--dip the chicken in the milk mixture again, and give it one more coat of flour.



Once you have a plateful of coated chicken, place them carefully in the hot oil and fry on each side until they are golden and crispy.

 Crispy Chicken Fingers

Ingredients:
4 chicken breasts, cut into tenderloins or nuggets
1 cup milk
1 egg
2 cups flour
4 tbsp. powdered sugar
2 tsp. black pepper
1 tbsp. salt
Cooking oil

Directions:
Whisk egg and milk together until combined.  Add chicken pieces.  Heat oil in dutch oven (to avoid messy stove and splatters) or deep fryer to medium-high heat.  Combine dry ingredients- flour, sugar, pepper, salt.  Dredge chicken in flour mixture.  For extra crispiness, dip in milk and then flour mixture a second time.  Carefully add chicken to hot oil and fry on both sides until golden and crispy.  Serve with bbq, ranch, honey mustard, or sweet and sour sauce.  Serves 4.

  1. Since my Dustin loves anything fried in oil, we are also fans of chicken fingers! I made them for the first time a few weeks ago, and they were great! We actually turned them into chicken parmesan.

  9. we love, love, love chicken strips!

    My kids like when I go all ridiculous and add crushed frosted flakes to the breading (i know)

    For the hubby and me... I usually add a dash of garlic powder, cayenne and rosemary.
