Many moons ago, over two years to be exact, a family in the church brought us a meal after Grace came home from the NICU. It was so good I've been keeping the memory warm in the back of my mind that long. Pretty amazing considering how little my brain capacity seems to be these days. I asked her for the recipe a couple of months ago, but she said most meals she makes without a recipe. So this is my take on her very yummy dish.
Sausage-Stuffed Chicken Breast
You'll need:
4 chicken breasts
1/2 lb. bulk sausage
1/2 cup cheese, whatever you prefer
1 egg
1 to 1-1/2 cups seasoned flour or bread crumbs
Cheese garnish, optional
Directions:
Cook the sausage over the stove until no pink is visible. Drain. Once the sausage is no longer warm, combine it with the cheese. Next, cut a large "pocket" in the side of the chicken breast, and fill it with the sausage cheese mixture. Use toothpicks to secure the stuffed chicken breasts. Crack the egg in a mixing bowl and add a little water to thin it. Place your flour or bread crumbs in another mixing bowl or in a resealable plastic bag. Dip the chicken in the egg, then dredge in the flour. You can then bake in the oven at 375* for 15-20 minutes, or you can fry it in oil on the stovetop. It's more healthy to bake it, but it tastes better to fry it. :) Remove toothpicks and sprinkle with cheese, allowing to melt slightly before serving.
