I have been dabbling in homemade dressing the last few weeks, and I love this one that I made last week. It's kind of a cross between vinaigrette (I just looked up how to spell that {ugh!} and saw that it is properly pronounced "veen-uh-GRETT") and French dressing.
Blend together until emulsified: 2/3 cup cider vinegar, 3/4 cup sugar, 1/2 cup oil, 1/2 cup ketchup. Be sure to measure the oil first, so the ketchup will slide right out of the measuring cup without any goopy mess! If you're not a big fan of vinaigrette, I would suggest cutting the vinegar down to 1/4 or 1/3 cup, and substitute the remainder with water or oil.
Drizzle this over spinach and/or Romaine leaves, mushrooms, caramelized nuts, cranberries, and cheese, or any other fabulous combination you can think up!

ohhh - I'll use this recipe as a base - probably substitute honey for the sugar.
