Here's the run-down of last's weeks meals...
Monday: Chicken Alfredo Pizza with Spinach Salad
Ben said the pizza was a little dry, so I have to figure a way to fix that. The salad was yum to the second power. I'll share the recipe this week.
Tuesday: Spinach Sausage Quiche with Peaches
Grace wanted to take a pass on this one, but Ben and I liked it. I tried a new crust recipe--super simple but a little too dry, so I think I need to re-work it.
Wednesday: Fish Stick Tacos with Rice
Ben wanted to just eat his fish sticks with ketchup. ("That's what we always did growing up!") I convinced him to try just one first, and he ended up eating them all that way. Definitely a new twist on fish sticks and tacos. Will make again.Thursday: Cheeseburgers, Best Potato Fries, Green Pepper Sticks
The cheeseburgers were good, and the fries were good too, but I think I will cut them larger next time or reduce cooking time, because they were a tad too crunchy for me. I think the recipe was intended for a thicker cut fry. They were good, though--most certainly crunchy on the outside, chewy on the inside.
Friday: Penny Casserole Not healthy, by any means, but simple, inexpensive, and tasty.
