Healthy SIMPLE (2 Ingredients!) Pumpkin Bread



Mrs. Diana Starre shared a scrumptious recipe that really couldn't be simpler.  That's a cliche that is really true in this case.  And unbelievably, it is also healthy.

Here it is:
1 spice cake box mix (or yellow cake mix with 1 tsp. cinnamon & 1/2 tsp. cloves)
1 -15 oz. can of pumpkin

Mix the pumpkin into the cake mix.  The batter will be thicker than usual.  Pour into 2 greased loaf pans or muffin pans.  Bake at 350, 35 minutes for the loaves or 25 minutes for the muffins.


This is a healthy alternative to the usual pumpkin bread because there are no eggs or oil added.  The pumpkin delivers the flavor and moisture to make this recipe really stand out from the rest!
How's that for simple?  Mrs. Starre reports that she has also added mini chocolate chips to give it a little chocolate twist.  She often bakes this in disposable mini muffin pans, freezes them, and takes them to shut-ins whom she visits.
