Slow Cooker Italian Roast Beef


A friend shared the simplest recipe for Italian beef ever, and the flavor is out of this world.  The prep takes about 10 minutes, and your slow cooker does the rest!  This is definitely a must-try if you like Italian Beef.  It's outstanding with crusty French bread or sausage rolls.  Use the broth after cooking as an au jus dipping sauce.  Yum-o!


Take 3-4 lbs. of beef and cut 4 slits in the meat. I bought 2 spencer cut beef roasts (whatever that means) that were 1.5 lbs. a piece, so I cut 2 slits in each, deep and long.


Fill each slit with 1 clove of garlic (or 1/2 tsp. minced garlic cloves), 1/2 tsp. of salt, and 1/2 tsp. of Parmesan cheese. Sprinkle oregano (I used my garden-grown oregano!) over the top.

Put your prepared roast and a 12 oz. can of beef broth in your slow cooker, and cook for 8-10 hours on low, or 4-6 hours on high. This seriously has to be the best Italian beef I have ever had.



Cost Analysis:
Meat: $6-8 for 3-4 lbs. @ $1.99/lb
Parmesan Cheese: $.05 for 2 tsp.
Salt: $.02 for 2 tsp.
Garlic: $.09 for 2 tsp. minced
Beef Broth: $.35
Oregano: $.08 for 1 tbsp. oregano
Total Cost: $6.59 for 3 lb. roast + additional cost of buns
