These really are too simple! I made a batch of these the other day, and my husband has been munching away at them. All you need is Ritz or Townhouse cracker, peanut butter, and melting chocolate, candy coating or almond bark.
Layer a cracker generously with peanut butter and top with additional cracker. Don't skimp or you won't be able to taste the peanut butter!
Use a double boiler or improvise with a metal bowl over water in a saucepan, melt the chocolate. Chocolate can be finicky, so stir as soon as the candy begins to melt. Continue to stir until no more chunks are visible. Turn off the burner and occasionally stir the candy to prevent hardening or chunks from forming.
Drop "cookie" in chocolate coating, then spoon chocolate on top. Use a fork to remove coated cookie, tapping the fork on the side of the bowl to remove excess chocolate. Scrap the bottom of the fork on the bowl as you remove to prevent drips. Lay the cookie to dry on a sheet of wax paper.
As you use up the chocolate, you will find that you don't have enough to coat more cookies, but there's too much to just throw it out. Use that little extra to coat mini pretzels or pile a bunch of peanuts and drizzle chocolate over the top to make chocolate-covered peanuts!
Add a few drops of food coloring to white candy coating and drizzle over chocolate for contrast and decoration. You can also use non-pareils or sprinkles!

These look yummy! One trick with melting chocolate that I accidentally came across ... melt it in the microwave at reduced power in a glass bowl - the bowl absorbs some of the heat and keeps the chocolate smooth longer and therefore making dipping easier.
