Simple Seasoned Potato Rounds

If it's 4:20 and you're still trying to figure out what to do for dinner, these potatoes snap together quickly and bake while you prepare the main dish!  I found the recipe on the bag of potatoes, and they were just right.  They were well-behaved as a good side dish should be--not stealing center stage and yet not bland either.
Preheat oven to 400 degrees. Wash and pat dry 4 medium-sized potatoes, leaving skins intact.
 Cut the potatoes into half-inch slices crosswise.  
Place potatoes in a large bowl or plastic bag, and sprinkle with 1-2 tsp. chili powder and salt and pepper to taste.  Stir, toss, or similarly cajole the spices to mingle evenly with the potato rounds.
 Place the rounds evenly on a greased cookie sheet.  You can drizzle with oil or butter.  I actually just misted mine with Pam, as I am trying to lose weight.
Bake for 30 minutes or until tender, turning once after 15 minutes.

This is such a versatile recipe; next time try Good Seasoning's Dry Italian dressing, Lawry's seasoned salt, garlic salt, dried chives, or any number of spices to dress this dish up to match your main course!
