Cauliflower-Crust Pizza

 I have been a little adventurous in my cooking lately, mostly spurred by a desire to eat junk food while still maintaining my weight loss goals.  I found this recipe on Pinterest, and I thought I'd give a try.

Our conclusion:
I LOVED IT!  BEN DID NOT!  Actually, he thought something looked a little suspicious when I put it on the table.  Poor guy--he never knows what his wife is gonna pull on him next.  He knows I'm on a health quest right now, so he's extra cautious now when he comes to the table.  Unfortunately, I failed to spray the pan before I baked the crust, so tugging to tear the crust away from the foil was his first clue.  He actually thought it was tolerable after trying it. He wanted to know what was healthy about it, so I told him, but then he began having violent convulsions at the mention of cauliflower.  Ok, not really, but he was positive he had an aftertaste in his mouth, and that I had just violated his trust in my cooking.  "What kind of nut puts cauliflower in their pizza crust?!"   Personally, I thought there was absolutely no flavor of cauliflower in the crust at all. Then again, does cauliflower even have a taste?  The crust is not like yeast dough; it's more like a baked riced texture.

Try it, you might like it.  Then again, maybe you won't.  I thought it was delish, and I can't wait to eat the leftovers.  Ben shudders every time I mention it.  In fact, he ended up calling some good friends and asking if they had any leftovers.  I think he just wanted sympathy.  I can't blame him.  And as he guessed they would, they did.  In fact, since they were heading past our house soon, they even delivered him two beef stroganoff sandwiches, much to his delight.

Yummy! Matt is always a bit suspicious when I put something new on the table! Have you seen/read "Deceptively Delicious" by Jessica Seinfeld? It's a cookbook with a ton of kid-friendly foods that have secret pureed ingredients (veggies and fruits) in them. You actually reminded me I need to cook out of it more!!! Thanks! Have you tried Cauliflower mashed potatoes? I still want to try that one:)

I wanted to try South Beach cauliflower as a substitute for mashed potatoes, but Beloved Husband would NOT! So, I was going to try it just for myself, and as the cauliflower was steaming, it smelled so good I just ate it as it was! No -- I haven't tried to 'sneak' in good ingredients.

Unfortunately, that's sometimes what happens when someone takes an original recipe tries to change it. The original recipe for cauliflower pizza is definitely better, is less fraught with error, is also on pinterest, and had pleased many a hungry hubby! http://blog.yourlighterside.com/2009/05/low-carb-pizza-dough-cauliflower.html I also share tips for no-fail pizza... Foil is definitely an issue. You want to use a regular pan sprayed with oil and run a spatula along the outside edges to loosen the crust, especially if you want to flip and cook a little longer (prior to adding the toppings). As well, removing the fennel is a huge mistake, since that's the one thing that masks the pungency of cauliflower--a pretty strong flavor! The point is not to taste that it's there.
